Upside Down Hamburger Pie

July 13. 1990

1 onion, chopped
2 T. shortening
1 lb. ground beef
salt / pepper
2 small cans green chilies, chopped
1/4 t. oregano
1 can condensed tomato soup
2 c. biscuit mix, prepared but not rolled out
1/2 c. medium sharp cheddar cheese, shredded

 In a 10" frying pan ,oven proof, cook onion in shortening until tenser. Add ground beef and seasonings. brown well.
Add soup and heat through. Pat biscuit dough on a piece of waxed paper to a 10" circle. Place on top of meat, remove paper, Bake 20 minutes at 425*. Turn upside down on a serving platter and let stand 5 minutes. Sprinkle on cheese. Serves 6


 Jody turned 18. Do I jump for joy or do I cry? I did both. She doesn't know that I know she's moving to Utah. She loves this recipe. served with cherry cheesecake, garlic bread and a salad with blue cheese dressing. She is my sunshine girl.


Chili Peppers:  Cut peppers in half lengthwise with a small sharp knife. Cut off stem, then slice peppers into quarters. Cut out membrane and seeds.
