Mexican Meat Loaf

August 1, 1995


2 lbs. ground beef
2 8oz, cans tomato sauce
1 7oz, can mexican style whole kernel corn, drained
1 c. corn chips, crushed
1/2 c. onion, chopped
1/2 c. green olives
1 4oz. can diced green chilies
2 eggs, slightly beaten
1/2 t. cumin
1/2 t. garlic powder

In a large bowl, mix beef, one can of the tomato sauce, corn chups, onions, eggs and half of the seasonings.
Blend well. Firmly pack meat mixture in an 8" x 4" x 3" loaf pan.
Bake at 375*  for 1 hour. Drain. Meanwhile, blend together remaining ingredients and pour over meat. Bake 10 minures. Let stand 10 minutes before serving. Serves 8
