Sunshine Salsa

May 22, 1991

1 can (20oz.) crushed pineapple
1/2 c. red bell pepper, diced
1/4 c. green bell pepper, diced
1 T. green onion, diced
2 T. jalapenos, minced
1 t. lime juice
1/2 t. sugar
1 large tomato, chopped

Drain pineapple juice, set aside 1/2 c....I drink it....Combine remaining ingredients with remaining juice.
Serve warm or cold. Serves 8

Today is Saturday. My children are grown and live away from home..NOT! My daughter, her new husband and new baby live here in my new house. My first grandchild was born May 2, 1991


Canned Salmon

 Salmon is so healthy. I loved my mother's salmon patties

Pink salmon: delicate in flavor and color

Red salmon:  Stronger in flavor and color

Chinook salmon: the largest of canned salmon., ranges from red to off-white

Coho salmon: a medium red

Pinks are the smallest--Chums are the palest and firmest. Both are terrific to eat right from the can or used in casseroles.
