Salmon Cornbread Deluxe

August 4, 1992


1/2 c. onion, chopped
1/2 c. green bell pepper, chopped
2 T. oil
1 14oz. pkg. cornbread muffin mix
1 1lb. can salmon
milk
1 egg, beaten

Saute vegetables in oil until tender. Set aside. In a mixing bowl, pour in muffin mix.Drain salmon liquid and add milk to measure one cup. Stir liquid and egg into min. Stir in veggies. Oil an 8" bundt pan. Spoon muffin mixture over salmon that is flaked in the bundt pan. Bake at 375* 50 minutes or until bread test done. Cool 5 minutes, then unmold onto serving platter. Fill ring with a choice of mashed potatoes or creamed peas. Serves 6
I also served some late string beans and carrots from my garden and this table setting is beautiful.

Mixed Berry Syrup

August 13, 1995


1 c. preserves, any flavor
1/2 c. fresh blueberries
3 T. oleo
2 T. water

Blend ingredients in a saucepan and heat until warm. Great on waffles or pancakes.

I'm washing dishes in my new stainless steel sink and preparing a cake for Debbie's birthday tomorrow.
After :America's Funniest Videos is over and it cools outside, we will go for a nice walk.

Screamin' Onions

August


1/4 c. celery, chopped
2 T. oleo
1 can condensed cream of chicken soup
1/2 c. sour cream
3 T. dry parsley flakes
1 lb. onions, chopped
1 small can carrots, sliced, drained

In a large deep skillet, saute onions and celery with oleo. Blend in soup and sour cream. Add milk and parsley. Add carrots and heat through.  Makes 4 cups.

When recipes call for items chooped, you can buy them already chopped, but it's cheaper to chop your own, tirn some music on and get your best paring knife out. I use kitchen gadgets I receive as gifts on the holidays and fondly disassemble and clean them

Reuben Casserole

August

1 15oz. can corn beef, thinly sliced
1 16oz. can sauerkraut
1 can condensed cream of broccoli soup
1/2 c. swiss cheese, grated
1/2 c. cheddar cheese, grated
1 c. buttered bread crumbs

Layer kraut, corn beef, cheeses and soup in a 2 qt. casserole. Top with crumbs.Bake at 350* for 30 minutes. Serves 6

The surgeon does everything but doesn't know anything. The medicine man knows everything but doesn't do anything. The psychiatrist doesn't know or do anything and the pathologist knows everything, but it's too late.


Thirty Minute Rolls

August

Measure and have ready:

1/4 c. sugar
1 egg
1 1/4 t. salt
3 c. flour
melt and cool 2 T. shortening

Dissolve in a large bowl:
2 pkgs. dry yeast
1 1/4 c. warm water

Add the sugar mixture to the yeast mixture. Gradually add flour. Beat with an electric mixer. Add cooled shortening and beat until mixed. Grease a large pan and drop by tablespoons close together. Let rise in a warm place, covered until tops are pan level, about 30 minutes. Bake 20 minutes at 375*.

Citrus and Spinach Salad

August 10, 1986


2 c. fresh spinach leaves
1 grapefruit, peeled, sectioned
1/4 c. oil
1 T. lemon juice
1 T. white vinegar
1/2 t. sugar
2 T. onion, diced
salt / pepper
dash dry mustard
pecan pieces

Clean spinach and remove stems. Pat dry. Tear into bite sized pieces and place in a serving bowl. Add grapefruit. Combine remaining ingredients, except pecans. To serve, pour dressing over spinach and garnish with pecans. Serves 2.


Olives:  An olive picked from the tree is very bitter and green. Then it is cured by removing the bitter solution away. Air is pumped the olive, causing them to oxidize, turning them brown-black. Green olives are not oxidized  Shelf life of unopened olives is four years. If you forget to save the brine when draining olives, make a solution of 1 t. salt to 1 pint of water.

Marion County Casserole

August 2, 1990


1 1lb. box cheese spread
1 c. milk
1/2 c. salad dressing
2 c. ham, cooked, cubed
1 10oz. pkg. frozen broccoli
5 oz. linguine, cooked, drained
1 T. dried chives, or fresh from your herb garden

In a medium saucepan, heat cheese, milk, and salad dressing. Add remaining ingredients, mix well. Place in a 2 qt. casserole. Bake at 350* for 40 minutes. Serves 6

Country Steak

August


1 1/2 lb. round steak
2 T. shortening
1 can condensed cheddar cheese soup
1/2 c. water
1 c. onions, chopped


Tenderize steak and cut into chunks. In a skillet, brown meat in shortening, pour off fat. Stir in soup, water and onion. Cover and simmer for 1 hour on low. Stir often. Serves 6

My Banana Cream Pie

August 16, 1985


1 prepared pie crust, any type
1 small box instant vanilla pudding mix
1 envelope whipped topping mix
1 1/2 c. milk
1/2 t. vanilla
3 medium bananas

In a small mixing bowl, blend pudding mix, whipped topping mix, milk and vanilla on low speed of an electric mixer. Increase speed to hig and beat 3 minutes or until mixture is very thickened. Pour half the mixture onto crust.  Layer banana slices on top and pour remaing filling over bananas. Chill 1 hour or until set. Garnish with bananas.

To keep bananas from blackening, dip slices in lemon juice.

The pie disappeared, then my kids did, and now it's my turn.

Late Night Tangy Flank Steak

August 23, 1990


2/3 c. catsup
1/3 c. water
1/4 c. lemon juice
1 t. celery seeds
1 t. Worcestershire sauce
1 bay leaf
1/2 t, coarse black pepper
1/4 t. basil
1 flank steak, scored, about 1 1/2 lbs.

Place steak in a shallow baking dish. Mix remaining ingredients and pour over meat. Marinate over night or all day. Warm slightly before placing over hot coals 4" from heat. Broil both sides until desired doneness. Meat will be pink inside. Serves 6

After the heat subsided, some neighbors stopped by and I got  this going while we watched "Nick At Night".

Breaded Pork Chops

August 8, 1990


6 pork chops, 1 " thick
2 eggs, beaten
1 c. bread crumbs
1 t. seasoned salt
shortening to fry in


Dip meat in eggs, then coat with bread crumbs. Brown in a skillet until both sides are golden brown. Arrange on a shallow pan in a single layer. in a single layer. Cover with foil and bake 30 minutes at 300*.

On bacon:   After rinsing bacon under the tap, cook on low heat to start. Drain grease as you go. occasionally turn up the heat. Your bacon will lay nice and flat!

Mexican Meat Loaf

August 1, 1995


2 lbs. ground beef
2 8oz, cans tomato sauce
1 7oz, can mexican style whole kernel corn, drained
1 c. corn chips, crushed
1/2 c. onion, chopped
1/2 c. green olives
1 4oz. can diced green chilies
2 eggs, slightly beaten
1/2 t. cumin
1/2 t. garlic powder

In a large bowl, mix beef, one can of the tomato sauce, corn chups, onions, eggs and half of the seasonings.
Blend well. Firmly pack meat mixture in an 8" x 4" x 3" loaf pan.
Bake at 375*  for 1 hour. Drain. Meanwhile, blend together remaining ingredients and pour over meat. Bake 10 minures. Let stand 10 minutes before serving. Serves 8

Clam Sauce with Linguine

August 19, 1990


10oz. linguine
2 squat cans minced clams
1/2 c. onion, chopped
1 clove garlic, minced
1 t. basil
dash red pepper
2 T. olive oil
1/4 c. water
2 T. fresh snipped parsley

Cook pasta according to directions on pkg. Drain liquid from clams, reserving half of the liquid. In a skillet, saute onion, garlic and seasonings in hot olive oil until tender. Very slowly, add clam juice and water. Bring to a boil and boil 4 minutes, reduce heat. Add clams and simmer 3 minutes, stirring occasionally. Pour clam sauce over linguine and serve on a platter. Serves 8



This recipe goes out to Salina, Ks. I camped at your KOA camp ground and it is super fun and so well kept.
After a week end of burgers and hot dogs, this recipe is a welcome home treat.

Tangy Short Ribs

August 2, 1992


2 lbs. short ribs
1 onion, chopped
seasoned salt and seasoned pepper
1 c. barbecue sauce
1/4 . beef bouillon
1/4 c. red wine or cooking sherry
2 cloves garlic

In a large pot, combine ribs, half of the onions and the seasonings. Cover with water and add bouillon. Bring to a boil, cover and simmer 1 hour. Drain, reserving 1/3 c. of the liquid. Arrange ribs in an 8" square baking dish. In a small saucepan, combine bbq sauce, wine, remaining onions and garlic. Bring to a boil and simmer for 7 minutes. Pour over ribs. Cover and bake 30 minutes at 350* Serves 4

Sweet Potato Apple Casserole

August


1 1/4 lbs. sweet potatoes
1/2 c. water
1 lb. apples
1 c. apple juice
2 T. cornstarch
3 T. water
1/2 c. honey
1/3 c. wheat germ
dash cinnamon

In a pot with , steam yams in 1/2 c. water, covered about 20 minutes. Peel and slice them lengthwise in 1/2 " slices. Layer the slices in a casserole. Peel and core apples, slicing them 1/2" thick over sweet potatoes.
Heat apple juice to boiling. Combine cornstarch with the 3 T. of water and slowly add to juice, cooking until thickened. Add honey. Spoon sauce over apples, top with wheat germ and cinnamon. Bake at 350* until apples are tender, about 25 minutes.

This recipe supposedly is good for fighting cancer. The "experts" always tell us different stories. To me, health food is any food eaten before the expiration date.

Blueberry Muffin Bread

August 4. 1992


2 9" foil pie tins
1 small box blueberry muffin mix
3 wooden squeeze type clothespins
oleo

Lightly grease the foil pans. Prepare mix according to directions. Pour batter in one pan, cover with the other pan, inverted, and secure with clothespins. Place over grill over low coals. Cook 15 minutes on each side, rotating pans occasionally. Cool 15 minutes. Remove lid and cur into wedges. Serve with oleo. Serves 6.


Today was our last summer picnic and we chose Watson Park so we could walk with the babies on the yellow brick road. Trai tried to feed his bread to the wooden scarecrow.

This recipe should find its way to every campsite.

No need to throw out unused egg whites. Put them in a tightly sealed container and freeze them. When you need to make a meringue, thaw them..1 egg white= 1 fluid ounce...8 egg whites = 1 cup.

Pork Chops N' Kraut

August


2 T. oil
6 pork chops
1 1lb. can sauerkraut
1 can peeled tomatoes

Cook meat in a heavy skillet until very well browned, reserve drippings. Place chops in a shallow casserole. Spoon on sauerkraut and top with tomatoes. Drizzle on pan drippings. Bake 1 hour at 350* Serves 6

French Dressing

August


1 1/2 c. salad oil
3/4 c. vinegar
1/2 t. sugar
1 1/2 t. salt
1/4 t. pepper
1 t. paprika
1/2 t. dry mustard

Whisk ingredients until blended. Makes 2 cups.


This is a sassy compliment to the vegetables you have tended to all season.

Jody and Angie held up the Bumper Car ride and the attendant had to stop the ride and unstick you. Jody loved the bumper cars best, Debbie the giant slide and Nancy, the scrambler.

Barbecued Pork Chops

August 17, 1988


6 pork loin chops, 1" thick
teriyaki sauce
1 small onion, chopped
1 T. oil
2 T. cider vinegar
2 T. brown sugar
1/2 c. catsup
dash charcoal seasoning
2 t. mustard
1.2 c. water
dash any style garlic seasoning



Sprinkle teriyaki sauce over chops in a glass casserole, marinate one hour. Turn and marinate another hour.
Place chops on a grill over low heated coals, cook 10 minutes on each side. While cooking, combine remaining ingredients. Baste chops the last 5 minutes of cooking time.

It's over 100* outside, so this time I made indoors with my toaster oven and we dined in front of Cosby reruns. We love that show.

A thought:
My second daughter was born in August, 10 months ago I bore my first daughter. and then 11 months months after my second daughter, I had a third...Life treats us differently I suppose. I am just a poor, single, yet happy parent.

Melon Cooler

1 small can lemonade mix
1/2 c. water
1 c. crushed ice
2 c. canteloupe chunks

Place ingredients in blemder and puree until smooth. Makes 3 cups.

Debbie's Stew

July


1 lb. ground beef
salt / pepper
1 c. brown gravy
1 envelope sloppy joe seasoning
1 can tomatoes, drained
1/3 c. water
1 can whole kernel corn, drained
1 can green beans, drained
1 can potatoes, undrained
1 bay leaf

Brown meat in a dutch oven, drain. Stir in seasonings and sloppy joe pack. Cover and simmer 15 minutes. Add remaining ingredients and simmer 8 minutes. Stir occasionally. Serves 4.

Debbie prepared this with home made bread from the bread machine. As she grew up, she taught herself the art of cooking Asian dishes. I love you Debbie.
As we sat at the table, Debbie smiled and said " Who ever finds the bay leaf gets out of clean-up,"

Ham and Olive Snacks

July 2, 1990


1 can deviled ham spread
1/4 c. finely chopped walnuts
2 T. oleo, softened
1/2 c. green olives, chopped
6 slices dark bread

Cut bread into half slices. If you can, cut a shape into the bread with a cookie cutter. Mix together ham, nuts and oleo. Place on the 12 bread slices and arrange olives on top. Serves 6

It is almost 108* outside!. When it is almost dark, I will grab a lawn chair and sit in pretty lawn and serve these to my neighbors.

Vegetable Cocktail

July


1 T. sour cream
3 c. cold vegetable juice
1 t. Worcestershire sauce
pinch sea salt

Put ingredients in a blender and beat well. Pour over ice. Serves 5

Spinach Dip

July 15, 1986


1 10oz. pkg. frozen chopped spinach, thawed and drained
1 8oz. pkg. cream cheese
1/2 c. milk
2 T. oleo
2 t. chickem bouillon granules
1 t. instant minced onion
1 T. lemon juice
assorted hard crackers

In a medium saucepan, combine cream cheese, milk, oleo and onions. Cook over lo heat until thickened and smooth. Stir in spinach and heat through. Remove from heat nd stir in lemon juice. Serve with crackers. Makes 2 cups.

A lot of us have ex's I assume. Mine loved this and he would take it to watch sports games with his friends.

Devin begged to ride that old wooden roller coaster at Joyland. A photographer happened to be in the seat in front and took this. I was at home making this recipe.

Beef Tongue: yes, some people still cook this.
Remove gristle at the heavy end of the tongue, and the skin, using a utility knife. starting at the middle, hold the knife in a slanted position and carve long even slices. Carve ends the opposite direction.

Noodle Tuna Delight

July 16, 1987


2 pkgs. instant noodles, broken
1 120z. can tuna, drained
2 T. oil
1 apple, cored and chopped
1 small onion, chopped
1/2 t. curry powder, optional
3 T. flour
1/2 c. milk
seasoned flavor packets dissolved in 1 c. water

For cream sauce, fry apple and onion in oil until tender. Add flour and slowly stir in milk and seasoned water mix. Add tuna, breaking well with a fork. Mix and simmer 12 minutes. Boil noodles for 3 minutes, drain, and add to tuna mixture. Serves 4

Pharmacist to customer:  There aren't really any serious side effects, just an occasional  Elvis sighting.

Brown Sugar Butterscotch

July 2, 1992


2 c. brown sugar
1/4 c. light corn syrup
1/3 c. oleo
2 T. water
2 T. white vinegar

In a 2 qt. saucepan, mix ingredients and cook over medium heat to hard crack stage. Stir occasionally. Remove from heat and let stand 60 seconds. Pour into an 8" buttered pan. Score top into serving size pieces/ Cool 20 minutes and turn onto buttered foil. Break with a spoon when candy hardens. Makes 1 1/4 lbs.

Chicken Rice L" Orange

1 pouch ready to cook rice 6 T. oleo, divided     July 21, 1988
1/2  c. each: celery and onion
1/2 t. grated orange peel
1 orange, peeled and sectioned, pulled apart
1 1/2 c. orange juice
salt / pepper
4 chicken breasts, boneless, skinless
1 t. cornstarch
1 T. water
1/3 c. flour

Cook rice according to directions, drain. Melt 2 T. of the oleo in a medium skillet. Add celery and onion, cook until tender about 5 minutes. Add 2 T. of the orange juice, orange peel, orange sections, seasonings and rice. Keep warm.
Coat chicken with flour. In a 10" skillet, brown chicken on both sides with remaining oleo. Reduce heat and simmer 12 minutes. Remove chicken and drain pan. Dissolve cornstarch in water, add to orange juice, cook until thickened. Arrange chicken over rice. Pour any spare sauce over chicken.

Antipasto Salad

July 22, 1987


1 16oz. pkg. frozen vegetables that contain broccoli
2 oz. salami, cut in julienne strips
4 oz. provolone cheese, cut in julienne strips
1/2 c. italian dressing
a touch of  parsley flakes

Place vegetables in a colander and hold under cold running water until thawed, drain. Combine veggies, salami, cheese, parsley and italian dressing. Keep chilled until serving. Makes 4 cips.

Boy! Today is hot and windy (SIZZLE) I really tried to fry an egg on the sidewalk. That's the little kid that lives inside of me.

Upside Down Hamburger Pie

July 13. 1990

1 onion, chopped
2 T. shortening
1 lb. ground beef
salt / pepper
2 small cans green chilies, chopped
1/4 t. oregano
1 can condensed tomato soup
2 c. biscuit mix, prepared but not rolled out
1/2 c. medium sharp cheddar cheese, shredded

 In a 10" frying pan ,oven proof, cook onion in shortening until tenser. Add ground beef and seasonings. brown well.
Add soup and heat through. Pat biscuit dough on a piece of waxed paper to a 10" circle. Place on top of meat, remove paper, Bake 20 minutes at 425*. Turn upside down on a serving platter and let stand 5 minutes. Sprinkle on cheese. Serves 6


 Jody turned 18. Do I jump for joy or do I cry? I did both. She doesn't know that I know she's moving to Utah. She loves this recipe. served with cherry cheesecake, garlic bread and a salad with blue cheese dressing. She is my sunshine girl.


Chili Peppers:  Cut peppers in half lengthwise with a small sharp knife. Cut off stem, then slice peppers into quarters. Cut out membrane and seeds.

Ripe Olive and Spinach Bowls

July 2. 1990



1 10oz. pkg. frozen chopped spinach
2 T. oleo
2 c. milk
1 c. chicken bouillon
1/2 t. salt
pepper
1 c. ripe olives, pitted, sliced
2 T. flour


 Thaw spinach in a medium saucepan with oleo, simmer. covered 4 minutes. Blend milk and flour, add to spinach, stir well. Add bouillon and seasonings. Cook over medium heat, stirring constantly until slightly thickened. Add olives and heat through. Serves 4

I will adding this to my Christmas menu. It is 108* out, so staying indoor, dreaming of Christmas and watching reruns of Unsolved Mysteries.

Party Rollups

July 30, 1986


2 3oz. pkgs. cream cheese, softened
1 c. white rice, cooked
5 T. green olives, minced
3 T. onions, minced
1 T. horseradish
1 T. hot dog relish
8 thin slices ham

Blend everything together except ham. Spread each ham slice with mixture and roll, securing with toothpicks.
 Cover and chill several hours. When serving, slice rolls into 1/2" slices. Makes 5 1/2 dozen.

 When I got home from work, Nancy had these ready for me. She is going to be a great cook!. These are just simply delicious. She got into the ham I was planning on for dinner, but kids do those things.
My little fancy Nancy.

 She grew up as of writing this and a carbon coy of Lady Gaga. Nancy is a superb cook and takes a single potato and makes the perfect golden hash browns, a secret she has not shared with me.

Necessity is the mother of taking chances...anon.

Green Beans with Leeks

2 medium leeks
1/4 c. oleo
2  16oz. cans grren beans, drained

Trim and split leeks lengthwise. Wash carefully and slice. Saute in oleo until tender, add beans and heat through. Serves 6


I used green beans from my garden after I cooked them. The taste of summer. If you cannot find leeks you can use green onions.

Z- Best Little Pizzas

July 8. 1987

1 tube biscuits, 10 count
1/3 c. tomato sauce
1/2 lb. ground beef
1 t. Italian seasoning
1/4 t. garlic salt
1 small can sliced mushrooms
2 T. onion, chopped
1 T. green pepper flakes
1/2 c. mozzarella cheese
1/4 c. cheddar cheese
2 T. Parmesan cheese

Preheat oven t 350*. Lightly grease a brownie pan and press biscuits onto bottom and sides to form a crust. Bake 6 minutes. Remove from oven and spread on tomato sauce. In fry pan, brown ground beef, drain. Blend in seasonings. Spread beef mixture over sauce. Add rest of toppings and bake 20 minutes.
Serves 4

WOW!  What a trip. Gloria, Bj, you three girls and I just got back from Okimah, Oklahoma to visit Gloria's grandparents. We were in a Volkswagen Rabbit, no doubt. That's 2 adults and 4 small children.
Twenty miles before we get home the car breaks down, it's the 4th, of course no one is home so we did fireworks at a road stop until a trucker helped us get the car going.

Picking Chickings

July 28, 1990


1 egg
1 T. milk
1 1/2 lbs. chicken, cut into boneless cubes
1 6 1/2 oz. bag tortilla chips, crushed
1/2. t. cumin
1 c. taco sauce

Blend together egg and milk. Dip chicken pieces in egg mixture, then dip tortilla chips. Do this twice to each piece. Micro-wave on high heat about 6 minutes or until chicken is not pink. Chicken will be hot! Stir cumin into taco sauce to make dipping sauce, stir and serve, Serves 4

Kiwi Fruit:  Choose a ripe kiwi by gently squeezing. The skin slightly gives into pressure. To ripen firm kiwi, place in a vented plastic bag with an apple for a couple days. To eat kiwi, cut in half and scoop out like a grapefruit or..pretend it's an apple.

Harvard Carrots

July


1/2 c. sugar
1/4 c. white vinegar
4 c. cooked carrots, sliced
1 1/2 T. cornstarch
1/4 c. water
1/4 c. oleo


Mix sugar and cornstarch. Add vinegar and water. In saucepan, cook until thickened, stirring constantly. Add carrots and cook over low heat 5 minutes. Add oleo. Serves 6

Taco Meat Balls

July


1 lb. ground beef
1 c. tortilla chips, crushed
1/2 c. onion
1 egg
salt / pepper
1/4 t. cumin and thyme (optional)

In a large bowl, blend beef, onion egg and seasonings. Form into balls and roll in crushed tortilla chips.
Fry 10 minutes, cover and simmer until done. Serves 4

Potato Bread

July 18, 1993


2 eggs
1 1/2 c. water
1 1/4 c. milk
1/4 c. oleo
1/4 c. honey
3 1/2 c. unbleached flour
1 1/2 c. instant mashed potatoes
2 1/2 t. salt
2 pkgs. dry yeast
about 3 c. whole wheat flour

 In a large saucepan, heat water, milk, oleo and honey until tepid. In a large bowl, combine tepid liquid, 2 c. of the unbleached flour, potatoes, salt , yeast, and eggs. Beat 4 minutes. Stir in remaining ingredients. Knead 7 minutes.
 Place in a greased bowl and cover. Let rise in a warm place until double. Grease 2 loaf pans. Punch down dough and divide into 2 loaves and place in pans. Cover and let rise until double. Bake at 375*, 40 minutes or until medium brown. Remove from pans and rub entire loaves with oleo.

 Mary Marshall of Marshall Auto Salvage bakes the best bread of anyone I've tried. She is the paternal grandmother of my children. Her cinnamon rolls could be marketed and she would be rich. xoxo

Butterscotch Oatmeal

July


2 eggs, beaten
3 1/2 c. milk
1 c. brown sugar
2 c. rolled oats
1/4 c. oleo

 In a large saucepan, combine eggs, milk and sugar. Cook over medium heat until slightly thickened, about 5 minutes.  Stir in oatmeal and cook until just bubbly. Add oleo, cover and remove from heat. Let stand 2 minutes. Serves 5

Bacon Coleslaw

July 14, 1993


3/4 c. salad dressing
1 T. sugar
3 1/2 c. green cabbage, shredded
1 c. red cabbage
1/2 c. salted peanuts
6 slices bacon, cooked, crumbled

Mix together salad dressing and sugar in a large bowl. Add remaining ingredients. Mix well and chill several hours before serving. Serves 10


 Wouldn't you know it? I planned a picnic for Riverside Park so we could all be together and it rains. We watched Nickelodeon with the kids. They picked all the peanuts from the slaw, big kids too.

Peach Pie Pudding

July 5. 1995


1 16oz. can peach slices
1/4 c. sugar
2 T. tapioca pearls
1/2 c. water


 Reserve 8 peach slices
Mash peaches and the juice they cane into a medium saucepan. Stir in sugar, tapioca and water. Let stand 5 minutes Cook, stirring constantly, on medium heat until it comes to a full boil. Pour into 4 desert dishes.
Cover surfaces and chill 3 hours before serving. Garnish with peach slices.


A nice treat since we have been eating fresh fruits and vegetables daily. A whole row  of radishes eaten in one day!...I'm still watching the OJ trial and grateful not to be prejudiced.

Summer Cobbler

July 30, 1992

1 c. sugar
1 T. cornstarch
1 c. water
1 pkg. (20 oz.) frozen berries
2 T. oleo

Topping:
1 c. all-purpose flour
1 1/2 T. sugar
1 1/2 t. baking powder
1/2 t. salt
1/4 c. shortening
1/2 c. milk

 In saucepan, combine sugar and cornstarch with water. Add berries and cook over medium heat, stirring constantly until thickened. Add oleo and stir. Pour into a 2 qt. casserole. Set aside.
 For topping, blend all ingredients except milk. Stir well, then add milk. Mix well. Drop by spoonfuls onto berries. Bake at 400* 25 minutes. Serve hot. Serves 8

My neighbor Doris offered strawberries to add to this in place of raspberries. Works!

Swiss Broccoli Soup

June 16. 1992


2 cans 10 1/2oz each, chicken broth
1 small bag or 2 small boxes frozen, chopped broccoli
2 c. swiss cheese, grated
1 t. seasoned salt
1/4 t. ground nutmeg
salt / pepper
1/2 c. flour
4 c.evaporated milk
1 c. water

In a dutch oven, combine broth,broccoli and seasonings. Stir over medium heat until broccoli thaws. Combine flour and water and stir into broccoli. Stir and cook until thickened and bubbly. DO NOT BOIL.
 Add cheese and milk, stirring constantly for 2 minutes. Serves 12

Filet Mignon

June

1  2 1/2 lb. round steak
meat tenderizer
1 clove garlic
1 c. beer

Moisten meat and use tenderizer to your choice. Mix garlic with beer and marinate 1 hour. Broil as you desire. Serves 6



I prepared this at Lake Afton in Goddard, Ks. I served fresh corn on the cob, garlic bread and fruits.
My family went swimming all day, showered at the public showers and came back to the camp site for this special meal other than our usual hot dogs.:)


About raisins and similar fruits: If you have clumps of raisins, dates or figs that have clumped together, place them on a cookie sheet in the oven on low or 150* for about 10 minutes. They will then separate.

Potato Pronto salad

June 7, 1992


2# red potatoes, quartered
1/2 c. salad dressing
1 small green bell pepper
2 green onions, chopped
1 T. spicy mustard

Boil potatoes  until tender. drain. Add remaining ingredients, mix well and chill at least 6 hours. Makes 6 servings.


 The veggies came from garden. It's a quick recipe and a variant of way to  use your garden veggies.
I served a meat loaf with this.

Place bread heels under meat loaf before baking to absorb the grease. Toss the heels out to the birds as they love this treat.

Apple Bake

June


1 tube of 10 count biscuits
2 apples ,peeled and cored and chopped
1/2 c. brown sugar
1/2 c. canned milk
1/2 c. dark corn syrup
1/4 c. oleo

Place biscuits in an ungreased 8" square pan. Arrange apples on top of dough. In saucepan, combine remaining ingredients. Bring to a boil, stirring. Pour hot liquid over apples. Bake 30 minutes at 375* .
Serves 4


Two thirds of our nation now lives in or near big cities. The other third is on the expressway looking for an exit.

Two Bean Chili

June 7, 1994


! lb. ground beef
3/4 c. onion, chopped
1 28oz. can tomatoes, chopped
1 15oz.can chili beans
1 15oz. can red kidney beans
1 15oz. can tomato sauce
1 envelope chili seasoning mix
shredded cheddar cheese for garnish

In a dutch oven, brown beef with onion, drain. Add remaining ingredients and simmer 30 minutes. Makes 10 cups.


 Today is hot and windy but chili sounded good. We are watching Entertainment Tonight and Hollywood Gossip.

Hickory Cheese Spread

June

1 pkg. (8oz.) cream cheese, softened
1 c. cheddar cheese, shredded
1/2 t. hickory salt
1/2 c. almonds, chopped fine
1/2 t. smoked paprika

Add all together and place in a cutesy serving dish. Chill until serving


Ability is what you're capable of doing. Motivation determines what you do. Attitude determines how well you do it.

 When baking or popping corn, use real butter or margerine in place of spread. They contain a lot of water and popcorn gets soggy and baked goods flop.

 Spent the night in Kansas City with my brother, his wife Rosale, and two neices Rosa and Anna. That makes 5 excited little girls for a day of World's of Fun. Coming home we were so tired but I gave each of my three a box of Honey Munch and all is well.

Veggie Mato Soup

June 8, 1990


1 can condensed tomato based soup
1 can vegetable based soup
1 1/2  soup can water
1 T. parsley flakes
1 c. cooked potatoes. cubed or 1 can whole potatoes

In saucepan, combine ingredients. Heat and serve. Serving size depends on the size of cans you use. Serve with saltines or croutons.

 This soup is great! Since summer is so near I decided to clear out my winter pantry and made this. Even with it being 93* out, a hot lunch sounds good. Oh man, but yes, Bart Simpson will no longer be a choice for family viewing.

Deviled Eggs

June



6 hard boiled eggs
salad dressing
2 T. chopped onions
dash white pepper
1/2 t. salt
1 T. dill pickle, chopped
1/2 t. mustard
paprika

Halve eggs and scoop the yolks into a small bowl. Mash yolks with a fork until finely crumbled. Add salt, pepper pickles and onions. Gently add salad dressing and the mustard until you get a nice spreadable texture and not too runny. Mix well. Divide mixture into egg halves. Sprinkle on paprika. Keep chilled
Makes 12


Life is always walking up to us and saying " Come on in, the living is fine" and what do we do? Back off and take its picture.

Mexican Marinade

June 30, 1993


1 c. BBQ sauce
1 T. lime juice
2 T. fresh cilantro
1 1/2 t. worcestershire sauce
1/2 t. ground cumin

Combine and mix well. Pour over your choice of grilling meat and marinate all day or over night. Drain, reserving sauce to baste on meat during cooking. Makes 1 cup

My brother John HAPPY BIRTHDAY
You came over this evening and we grilled hamburger steaks outside using this recipe. We had a sing-a-long with Devin to songs from Eureeka's Castle. I love you John.

 The nineties are fun with us baby boomers, coming together after we've raised our children and most of us have grandchildren.
 But not everything in Wichita has been smooth. We have abortion protesters lying down in front of moving vehicles in front of Dr. Tiller's office, plus the counter protesters. Sleeping residents are getting shot by shootists, there are two known rapists in town and we have had devastating fatal tornadoes. It gets better though.

Cheese Bandits

June 1, 1989

1/2 c. oleo
1/2 c. sharp cheddar cheese, grated
1 c. sifted all purpose flour

Cream oleo until smooth. Add heese and blend well. Gradually add flour. Roll into small balls, place on a greased cookie sheet. Lightly flatten with a fork. Bake 15 minutes at 325*. Makes 3 dozen.

Never understand about cheese being grated or shredded so you choose:)

You girls loved to hand these out to your friends after school. One day we came home and our pet shitzuh, Bandit, was on the table eating away and we could only save a few. Hence the name...

Maple Syrup

Bacon Chestnuts

June 11. 1993


2 cans (8 oz. each) whole water chestnuts, drined
1 lb. bacon, cut strips in half
toothpicks

Wrap a bacon strip around each chestnut. Secure with tothpicks. Broil until bacon is done. Makes about 2 dozen.

 This is a super treat for Father's day!

I like to prepare this for parties plus it looks elegant on any table setting.



When you come right down to it, there was more prime time before television.

Barbecue Herb Meatloaf

June


1/2 c. BBQ sauce, divided
1 lb. ground beef
1/2 c. dry bread crumbs
1/3 c. onions, chopped
1/4 c. green bell pepper
1 egg, beaten
1 T. each: parsley flakes, fresh parsley and leaf basil
1 clove garlic, minced
1/2 t. each: thyme and salt
1/4 t. black pepper

Heat oven to 375*. Mix 1/4 c. 0f the BBQ sauce with remaining ingredients. Shape into a log in a 10"x6" baking dish. Bake 45 minutes. Let stand 10 minutes before slicing. Serves 6


 Today was so bitter cold so I stayed in and watched Geraldo Rivera and drooled. The show was about skin color and I learned so much positive facts. Thank you sexy Geraldo

Buttermilk Lemon Pancakes with Maple Lemon Syrup

June 3, 1994


2 c. biscuit and baking mix
3/4 c. buttermilk
1/2 c. milk
1/2 t. grated lemon peel
1 1/2 T. lemon juice
1 egg

 Beat ingredients with a wire whisk or by hand. Pour 1/4 c. batter onto a lightly greased griddle or skillet. Cook until edges are dry, turn only once to desired doneness. Makes 12 pancakes

For syrup:

1 c. maple flavored syrup
1 T. lemon juice
2 T. oleo

Heat in a small saucepan and serve over pancakes. Makes 1 cup.

 I fixed this while my family was watching Beetlejuice cartoons. He's arresting people for indecent decomposure.
 I just happened to look out and noticed Danny's tires getting slashed.


An excerpt from my diary June 19, 1992 Friday

 The tornado sirens went off at 4:30 a.m. and I called relatives in Valley Center, Ks to warn them of a funnel on the ground there. At 6:30 a.m. we got back to bed. Later in the day we got a horrible hail storm that pounded Wichita badly. Many houses had windows blown out and roofs destroyed and siding damaged severely. There is a story in the paper about a man out test driving a new car and it came back totaled. Our truck was caught and damaged enough to pay off the balance. I'm talking huge hail, softball sized.

Chocolate Chip Cookies

June

1 3/4 c. all-purpose flour
1 t. baking soda
1/2 t. salt
1 c. oleo, softened
3/4 c. sugar
3/4 c. brown sugar, lightly packed
2 eggs
1 1/2 t. vanilla
1 1/2 c. crisp rice cereal
1 6oz. pkg. semi sweet chocolate chips

Mix together flour, salt and baking soda. Set aside. In a large bowl, cream oleo and sugars until fluffy. Add eggs and vanilla. Add to flour mixture. Stir in cereal and chips, blending well. Drop onto a greased cookie sheet, bake 10 minutes at 350*. Makes 3 to 4 dozen.


Cookies are best baked on a shiny cookie sheet with low or no sides. Do not grease unless directed, using oil or shortening or a spray. Never use oleo as it will burn.

 We've had some hot and sunny days that go quickly. Sunday we went to the Sonic Drive-in and Devin got her first corn dog and you ate almost the whole thing. Boris Yletstein is in town, he's the President of Russia and delivered some peace talks. You are watching Sesame Street and drinking orange juice. Virginia B, is coming today from Southeast Clinic for a check up.
 I put water in the kiddee pool and everyday you are walking better. Our house if full of sand fleas so the bug man is also coming today. We found Trai a musical teddy bear at a yard sale today. Love ya.

Cin-full Muffins

June


1 !/4 c. all- purpose flour
1/2 c. instant grits
1 T. baking powder
1/4 t. salt
4 T. sugar
1/4 c. oleo
1 egg
3/4 c. milk
1 t. cinnamon or Vietnamese cinnamon

Mix fry ingredients together. Cut in oleo until mixture is course. Add milk and egg, stirring until just moistened. Spread into greased muffin cups 2/3 full. Bake at 425* for 10 minutes. Serve hot dipped in cinnamon sugar.

 This recipe is very sin-sational

Plantains
 plantains look like odd bananas and they have to be cooked. Peel plantains by cutting off ends and slitting skin lengthwise several times. Run fingers between skin and fruit to remove peel. Fry in oil after slicing to 3/4" thick. Drain slices, flatten and re fry.

Let's not be too critical of the tobacco industry. After, they found a cure for old age. by unknown.

White Party Cake

June 28. 1994


1 1/4 c. sugar
1/2 c. shortening
2 c. all -purpose flour
3 t. baking powder
1 4/ t salt
3/4 c. milk
1 t. vanilla


 Cream together sugar and shortening until fluffy. Beat in eggs, one at a time, beating well after each addition.
 Add dry ingredients alternately with milk. Begin and end with dry ingredients. Beat in vanilla Pour into 2 8" round cake pans that have been greased and dusted with flour. Bake 30 minutes at 350*. After 10 minutes, remove from pan. Cool before decorating.

Baby Travis helped me decorate this cake and I think he said it twas Lambchop.


Sprinkle baking soda on burnt pots and pans, just enough water to make a paste, let stand several hours and the burnt goo just pulls off.

Egg white removes chewing gum.

If you drop an egg on the floor, cover it with salt and it picks right up.

Cheese Strata

June 15, 1994


3 eggs
2 c.low fat milk
1 t. Worcestershire sauce
1 t. mustard
salt / pepper
6 slices dry bread,  cubed
6 oz, cheddar cheese
1 T, parsley flakes

Grease 12 muffins. SO NOT USE PAPER LINERS. Beat together eggs, milk, Worcestershire sauce
mustard and seasonings. Pour over bread crumbs in a large bowl and chill 1 hour. Add remaining ingredients and pour into baking cups. Bake in a preheated oven at 325* for 35 minutes or until surface seems dry.
Serve with carrot curls


 Jamie Messner, a good friend I rarely see, good luck in your teaching career. Some students are going to be very lucky to be in your studies.

Carrot Curls

 Cut the carrots thinly lengthwise using a paring knife. Roll each slice around your finger and secure with a tooth pick. Chill in ice water. Remove tooth pick before serving.


During my 30 years for this book, sometimes I had to use commodities or food stamps, plus get government assistance. Thank you State of Kansas for helping to keep my daughters fed and clothed. You don't know how much I appreciated it. Thank you very very much

Hot Lunch Skillet

June


1 1/2 c. shaped pasta
1 pkg, hot dogs, sliced into coins
1 can ready to serve vegetable soup
1 can condensed tomato soup
1/2 c. grated cheese

Cook pasta, drain. Lightly brown hot dogs and mix all ingredients. Simmer 15 minutes.

This recipe is a hit with toddlers as it's easy to spoon and pick up with tiny fingers. I never give out cold hot dogs, best to heat to kill bacteria.

Chili Con Queso

May 19. 1990



1 c. cheddar cheese, shredded
1 c. jack cheese, shredded
1/T. cornstarch
3 T. oil
1/2 c. onion, diced
1 clove garlic, minced
1 t. chili powder
1/2 t. sugar
1 can (14 1/2 oz.) tomatoes, chopped
1 squat can green chilies
tortilla chips


 Toss cheeses together. In skillet, heat oil over medium-high heat. Add onion, garlic, chili powder and sugar.
 Cook, stirring 3 minutes. Add tomatoes and chilies. Simmer uncovered for 10 minutes. Stir in cheese and let stand a few minutes. Serve with chips.  Makes 2 1/2 cups,.

 Dev, you love the outdoors and playing with dolls. At 1 year old you love cheese curls, ice cream, Cheerios, Spam and spinach. When I get a Devin hug, it's a hug from God.

Meatballs and Mushroom Rice

May 3, 1993


1 pouch, ready to cook rice
1 1/2 c. fresh mushrooms, sliced
1/4 c. green onion, minced
1 # ground beef
3/4 c. bread crumbs
1 egg
salt/ pepper
1/2 t. marjoram
1 t. garlic powder
1/2 c. water
1/2 c. beef bouillon
2 t. cornstarch
1 T. Worcestershire sauce
1 T. oleo
1 T. lemon juice

Cook rice according to package directions. Drain. In skillet, saute vegetables in oleo until tender. Remove from skillet and set aside. Combine meat, crumbs, egg and seasonings. Form into 12 balls. Add water and bouillon, Worcestershire sauce and lemon juice. Cover and simmer 12 minutes. Combine cornstarch with a little of the hot liquid and stir into skillet. Cook until thickened. Mix rice with vegetables. Serve meatballs and sauce over rice.  Serves 4

Shrimp Cocktail Sauce

May 31. 1983



2 c. catsup
1 T. lemon juice
2 T. horseradish
2 drops hot pepper sauce
1 pound prepared shrimp

Combine ingredients, except shrimp in a round serving dish. Arrange shrimp on a platter with the sauce bowl in the middle.  Serves 6

This recipe will zap a little zing back to you.

1 pound mexican style cheese spread
1 14 oz. can chopped tomatoes, drained
1/4 c. salsa
1 T. chopped cilantro

Blend and melt all ingredients which ever method you prefer. Serve with tortilla chips.

This recipe has a built in disappearing act.

Molasses Sugar Cookies

May 10, 1996


3/4 c. shortening
1 c. sugar
1/4. c. dark molasses
2 c. all -purpose flour
2 t. baking soda
1 t. cinnamon
1/2 t. pumpkin pie spice
1/2 t. salt
1 egg
sugar for dipping


In a large mixing bowl, cream together shortening and 1 cup of the sugar. Add molasses and egg, beat well. Add dry ingredients and blend well. Cover and chill about an hour. Form into ping pong size balls and roll each in sugar. Place on a greased cookie sheet. Bake at 375* for 8 minutes or dry on top Let stand a minute before removing. Makes 2 1/2 dozen.

Today kicks off the Wichita River Festival. We go every year and find wonderful events to attend. Today is wet and cool and we go any way.

Back Pack Sandwiches

May 10, 1996


1 4 3/4 oz. can or squat size chicken spread
1/4 c. celery, diced
2 T. bacon bits
2 single serve packets mayonnaise
8 slices rye bread, buttered
2 plastic spoons


 Put celery in a tiny container. Wrap bread in a baggie or wrap. If your chicken spread doesn't have a pull top then pack a can opener. When you reach your destination, mix ingredients together and spread on the bread. Don't forget to pack some juice boxes and chips. Makes 4 sandwiches


 This was a nice cool day and Devin and I went for a small hike to Linwood Park. I got home to watch my idol Oprah Winfrey on tv. I love that girl. GO GIRL!

Cheesy Rice Balls

May 29, 1989


4 c. warm cooked rice
2 eggs, slightly beaten
1 T. horseradish
salt/ pepper
1 T. dry mustard
1 t. mustard
2 T. dry parsley flakes
1 t. Worcestershire sauce
1 1/2 c. grated cheddar cheese
1/2 c. dry bread crumbs
oil for frying


Combine eggs, horseradish, seasonings, mustard and Worcestershire sauce. Add cooked rice and cheese. Mix well. Chill 1 hour. Roll into 1 " balls and roll thru bread crumbs. Fry in hot oil for 3 minutes. Drain on paper towels. Serve hot. Makes 6 dozen

 I made these for a Memorial Day picnic. It is 95* already. On "Alf", he's eating rice too. I love that alien.

 My children would have been much more pleased if I would just give them a tub of frosting and a spoon, then to buy or bake a birthday cake. I try to prepare an exotic dish and just serve cupcakes.


Chili sauce is only ketchup with an attitude

Crab Meat Dp

May 2. 1994


8 oz. pkg, cream cheese
2 T. mayonnaise
2 T. Worcestershire's sauce
1 T. lemon juice
1 small onion, diced
1 c. chili sauce
1 flat can crab meat, drained, rinsed

Combine cream cheese, mayo, Worcestershire sauce, lemon juice and onion. Shape into an oval and chill. When ready to serve, cover with chili sauce and crab meat. Serve with  thick cracker. Makes about 2 cups.


Devin is 2 years old today! Happy birthday, Pook. You love seafood and enjoyed this but I did omit onions this time.  You also learned to do a rain dance today, because it's pouring out.

 Toddlers seem to love food they can dip into.

                                                           Blenders

 I found a nice blender at a yard sale today. Unfortunately there are no instructions included. Blenders will not mash potatoes, beat egg whites or grind raw meat.

Tickled Devil Dip

May 31, 1990


1 8 oz. pkg. cream cheese
1 squat can deviled ham
1 T. instant minced onion
1T. dried chives
1/4 c. horseradish
1/8 t. each garlic powder, celery powder
dash salt

Soften cream cheese to room temperature. Blend in rest of ingredients.
Makes 1 1/2 cups


Nancy loves this with saltines.

The tombstone is about the only thing that can stand straight up and lie on its face at the same time....
