Molasses Sugar Cookies

May 10, 1996


3/4 c. shortening
1 c. sugar
1/4. c. dark molasses
2 c. all -purpose flour
2 t. baking soda
1 t. cinnamon
1/2 t. pumpkin pie spice
1/2 t. salt
1 egg
sugar for dipping


In a large mixing bowl, cream together shortening and 1 cup of the sugar. Add molasses and egg, beat well. Add dry ingredients and blend well. Cover and chill about an hour. Form into ping pong size balls and roll each in sugar. Place on a greased cookie sheet. Bake at 375* for 8 minutes or dry on top Let stand a minute before removing. Makes 2 1/2 dozen.

Today kicks off the Wichita River Festival. We go every year and find wonderful events to attend. Today is wet and cool and we go any way.
