Cooking with Philosophy..May..by Juliet

Being a busy mother, working class citizen, community activities, daughter and other categories, my book is compiled into the months I prepared them. Some pages have cooking tips or private thoughts or poetry.

                                                       Quesadillas Pina

        1 8oz. can crushed pineapple
        1 small tomato, chopped
        2 T. green onion, chopped
        1 T. jalapeno pepper, chopped
        4 8" tortillas
        1 c. monterey jack cheese , shredded    

Drain pineapple and mix with tomatoes, green onion, and jalapeno.  Top each tortilla with equal portions of mixture, top with cheese.  In a skillet with a touch of oil, cook quesadillas. turn once. When cheese is melted, remove to serving platter and cut each tortilla into triangles.    Serves 4


This is so good! Today is Sunday, 6.00 p.m. and Devin is racing through the house in excited spirit because "America's Favorite Videos" is on. That is her favorite show, especially when the host Bob Saget is on.
