Buttermilk Lemon Pancakes with Maple Lemon Syrup

June 3, 1994


2 c. biscuit and baking mix
3/4 c. buttermilk
1/2 c. milk
1/2 t. grated lemon peel
1 1/2 T. lemon juice
1 egg

 Beat ingredients with a wire whisk or by hand. Pour 1/4 c. batter onto a lightly greased griddle or skillet. Cook until edges are dry, turn only once to desired doneness. Makes 12 pancakes

For syrup:

1 c. maple flavored syrup
1 T. lemon juice
2 T. oleo

Heat in a small saucepan and serve over pancakes. Makes 1 cup.

 I fixed this while my family was watching Beetlejuice cartoons. He's arresting people for indecent decomposure.
 I just happened to look out and noticed Danny's tires getting slashed.


An excerpt from my diary June 19, 1992 Friday

 The tornado sirens went off at 4:30 a.m. and I called relatives in Valley Center, Ks to warn them of a funnel on the ground there. At 6:30 a.m. we got back to bed. Later in the day we got a horrible hail storm that pounded Wichita badly. Many houses had windows blown out and roofs destroyed and siding damaged severely. There is a story in the paper about a man out test driving a new car and it came back totaled. Our truck was caught and damaged enough to pay off the balance. I'm talking huge hail, softball sized.
