Clam Sauce with Linguine

August 19, 1990


10oz. linguine
2 squat cans minced clams
1/2 c. onion, chopped
1 clove garlic, minced
1 t. basil
dash red pepper
2 T. olive oil
1/4 c. water
2 T. fresh snipped parsley

Cook pasta according to directions on pkg. Drain liquid from clams, reserving half of the liquid. In a skillet, saute onion, garlic and seasonings in hot olive oil until tender. Very slowly, add clam juice and water. Bring to a boil and boil 4 minutes, reduce heat. Add clams and simmer 3 minutes, stirring occasionally. Pour clam sauce over linguine and serve on a platter. Serves 8



This recipe goes out to Salina, Ks. I camped at your KOA camp ground and it is super fun and so well kept.
After a week end of burgers and hot dogs, this recipe is a welcome home treat.

I treated you girls to Sambo's for breakfast and on the way home a stray kitten adopted us. Her name is now Tigger. You get to stay up late but if Jody gets tired she will argue points with me.
