Screamin' Onions

August


1/4 c. celery, chopped
2 T. oleo
1 can condensed cream of chicken soup
1/2 c. sour cream
3 T. dry parsley flakes
1 lb. onions, chopped
1 small can carrots, sliced, drained

In a large deep skillet, saute onions and celery with oleo. Blend in soup and sour cream. Add milk and parsley. Add carrots and heat through.  Makes 4 cups.

When recipes call for items chooped, you can buy them already chopped, but it's cheaper to chop your own, tirn some music on and get your best paring knife out. I use kitchen gadgets I receive as gifts on the holidays and fondly disassemble and clean them

Sweet Potato Apple Casserole

August


1 1/4 lbs. sweet potatoes
1/2 c. water
1 lb. apples
1 c. apple juice
2 T. cornstarch
3 T. water
1/2 c. honey
1/3 c. wheat germ
dash cinnamon

In a pot with , steam yams in 1/2 c. water, covered about 20 minutes. Peel and slice them lengthwise in 1/2 " slices. Layer the slices in a casserole. Peel and core apples, slicing them 1/2" thick over sweet potatoes.
Heat apple juice to boiling. Combine cornstarch with the 3 T. of water and slowly add to juice, cooking until thickened. Add honey. Spoon sauce over apples, top with wheat germ and cinnamon. Bake at 350* until apples are tender, about 25 minutes.

This recipe supposedly is good for fighting cancer. The "experts" always tell us different stories. To me, health food is any food eaten before the expiration date.

Vegetable Cocktail

July


1 T. sour cream
3 c. cold vegetable juice
1 t. Worcestershire sauce
pinch sea salt

Put ingredients in a blender and beat well. Pour over ice. Serves 5

A shot of vodka gives it a boost:)

Oranges grow in California
Apples grow there too
But it takes a state like Kansas
To grow a peach like you.

My older sister, Jackie, bought me an autograph book with her first wages she earned at Innes" Tea Room.

Antipasto Salad

July 22, 1987


1 16oz. pkg. frozen vegetables that contain broccoli
2 oz. salami, cut in julienne strips
4 oz. provolone cheese, cut in julienne strips
1/2 c. italian dressing
a touch of  parsley flakes

Place vegetables in a colander and hold under cold running water until thawed, drain. Combine veggies, salami, cheese, parsley and italian dressing. Keep chilled until serving. Makes 4 cips.

Boy! Today is hot and windy (SIZZLE) I really tried to fry an egg on the sidewalk. That's the little kid that lives inside of me.

Ripe Olive and Spinach Bowls

July 2. 1990



1 10oz. pkg. frozen chopped spinach
2 T. oleo
2 c. milk
1 c. chicken bouillon
1/2 t. salt
pepper
1 c. ripe olives, pitted, sliced
2 T. flour


 Thaw spinach in a medium saucepan with oleo, simmer. covered 4 minutes. Blend milk and flour, add to spinach, stir well. Add bouillon and seasonings. Cook over medium heat, stirring constantly until slightly thickened. Add olives and heat through. Serves 4

I will adding this to my Christmas menu. It is 108* out, so staying indoor, dreaming of Christmas and watching reruns of Unsolved Mysteries.


Don't aim for success if you want it, just do what you love and believe in and it will come naturally....

Green Beans with Leeks

July 25, 1986

2 medium leeks
1/4 c. oleo
2  16oz. cans grren beans, drained

Trim and split leeks lengthwise. Wash carefully and slice. Saute in oleo until tender, add beans and heat through. Serves 6


I used green beans from my garden after I cooked them. The taste of summer. If you cannot find leeks you can use green onions.

Harvard Carrots

July


1/2 c. sugar
1/4 c. white vinegar
4 c. cooked carrots, sliced
1 1/2 T. cornstarch
1/4 c. water
1/4 c. oleo


Mix sugar and cornstarch. Add vinegar and water. In saucepan, cook until thickened, stirring constantly. Add carrots and cook over low heat 5 minutes. Add oleo. Serves 6

Bacon Coleslaw

July 14, 1993


3/4 c. salad dressing
1 T. sugar
3 1/2 c. green cabbage, shredded
1 c. red cabbage
1/2 c. salted peanuts
6 slices bacon, cooked, crumbled

Mix together salad dressing and sugar in a large bowl. Add remaining ingredients. Mix well and chill several hours before serving. Serves 10


 Wouldn't you know it? I planned a picnic for Riverside Park so we could all be together and it rains. We watched Nickelodeon with the kids. They picked all the peanuts from the slaw, big kids too.

Potato Pronto salad

June 7, 1992


2# red potatoes, quartered
1/2 c. salad dressing
1 small green bell pepper
2 green onions, chopped
1 T. spicy mustard

Boil potatoes  until tender. drain. Add remaining ingredients, mix well and chill at least 6 hours. Makes 6 servings.


 The veggies came from garden. It's a quick recipe and a variant of way to  use your garden veggies.
I served a meat loaf with this.

Place bread heels under meat loaf before baking to absorb the grease. Toss the heels out to the birds as they love this treat.

Deviled Eggs

June



6 hard boiled eggs
salad dressing
2 T. chopped onions
dash white pepper
1/2 t. salt
1 T. dill pickle, chopped
1/2 t. mustard
paprika

Halve eggs and scoop the yolks into a small bowl. Mash yolks with a fork until finely crumbled. Add salt, pepper pickles and onions. Gently add salad dressing and the mustard until you get a nice spreadable texture and not too runny. Mix well. Divide mixture into egg halves. Sprinkle on paprika. Keep chilled
Makes 12
