Chili Con Queso

May 19. 1990



1 c. cheddar cheese, shredded
1 c. jack cheese, shredded
1/T. cornstarch
3 T. oil
1/2 c. onion, diced
1 clove garlic, minced
1 t. chili powder
1/2 t. sugar
1 can (14 1/2 oz.) tomatoes, chopped
1 squat can green chilies
tortilla chips


 Toss cheeses together. In skillet, heat oil over medium-high heat. Add onion, garlic, chili powder and sugar.
 Cook, stirring 3 minutes. Add tomatoes and chilies. Simmer uncovered for 10 minutes. Stir in cheese and let stand a few minutes. Serve with chips.  Makes 2 1/2 cups,.

 I grabbed my favorite chair and an antacid and a bowl of this to watch Freddie's Nightmares.

 Aunt Jody, you and I walked to Old Town for the annual BBQ Cook Off and we stopped at every garage sale on the way.
 Dev, you love the outdoors and playing with dolls. At 1 year old you love cheese curls, ice cream, Cheerios, Spam and spinach. When I get a Devin hug, it's a hug from God.

 One learns in life to keep silent and draw one's own confusions.
