Salmon Cornbread Deluxe

August 4, 1992


1/2 c. onion, chopped
1/2 c. green bell pepper, chopped
2 T. oil
1 14oz. pkg. cornbread muffin mix
1 1lb. can salmon
milk
1 egg, beaten

Saute vegetables in oil until tender. Set aside. In a mixing bowl, pour in muffin mix.Drain salmon liquid and add milk to measure one cup. Stir liquid and egg into min. Stir in veggies. Oil an 8" bundt pan. Spoon muffin mixture over salmon that is flaked in the bundt pan. Bake at 375* 50 minutes or until bread test done. Cool 5 minutes, then unmold onto serving platter. Fill ring with a choice of mashed potatoes or creamed peas. Serves 6
I also served some late string beans and carrots from my garden and this table setting is beautiful.
