4 c. warm cooked rice
2 eggs, slightly beaten
1 T. horseradish
salt/ pepper
1 T. dry mustard
1 t. mustard
2 T. dry parsley flakes
1 t. Worcestershire sauce
1 1/2 c. grated cheddar cheese
1/2 c. dry bread crumbs
oil for frying
Combine eggs, horseradish, seasonings, mustard and Worcestershire sauce. Add cooked rice and cheese. Mix well. Chill 1 hour. Roll into 1 " balls and roll thru bread crumbs. Fry in hot oil for 3 minutes. Drain on paper towels. Serve hot. Makes 6 dozen
I made these for a Memorial Day picnic. It is 95* already. On "Alf", he's eating rice too. I love that alien.

My children would have been much more pleased if I would just give them a tub of frosting and a spoon, then to buy or bake a birthday cake. I try to prepare an exotic dish and just serve cupcakes.
